Sunflower lecithin is various fatty substance that can be extracted from sunflowers. It is considered a natural emulsifier, which can help it reduce the presence of other fats, as well as protect the red blood cells. Lecithin is essential to the body as it is rich in choline and other essential fatty acids such as phosphatidylinositol. Phosphatidylinositol can stimulate reverse cholesterol transport by enhancing the flux of cholesterol into HDL and promoting the transport of high-density lipoprotein-cholesterol (HDL-C) to the liver and bile.
